The default percentages should work well and the serving size is perfect for a standard thin Italian-style base. Hydration could benefit from being slightly higher if you've got a stand mixer, otherwise hand mixing becomes very hard.

Baker's Percentages
You may find it a bit odd that the total percentage is over 100% by default. This is known as using baker's percentages, where all other ingredients are a reference to 100% flour, as this is typically the biggest ingredient by weight in baking. To work out the final weights, we divide the final weight by the total percentage to get the weight of the flour as a proportion of that, then work out the rest of the ingredients with reference to the flour.
This makes the recipe really easy to adjust for anything from 1 pizza to 100, and gives us a good reference for how wet the dough is.
